How I spent my Super Bowl Weekend... Not watching the Super Bowl.

Let me start by saying that I could care less about the Super Bowl. Now if the Vikings were in it, I'd have a reason to pay attention. Instead I decided to cook and bake a few new things, do some food prep for the week, get some laundry done, get my hair cut, fell asleep to some movies and actually watched a few.

On Friday night Hans and I did the suburban family thing to do and went to Costco- and we actually walked out with just what we came for. Then we went and had some amazing Mexican food at a little place called Teresita's. It is AMAZING! The we came home entered into a food coma and made it to about 10:30.

Saturday I was a little busier. I decided to make a Tomato Tortilla Soup, and at first was worried about how it would turn out, but after 6 hours in the crock pot it turned out amazing!!!

I also got my hair cut, but I'll spare you the loveliness that I'm currently exuding at the moment... Hans and I debated about going to a movie, but we debated too long and decided to watch some movies at home instead. We did watch a crazy documentary called the Queen of Versailles. It's about some crazy rich people on brink of not being so crazy rich anymore and almost loosing the largest house in America. We also caught up on The Office and I decided to fall asleep to a bad movie about a husband and wife giving each other a hall pass. According to Hans it was your typical story about hall passes- the wife saying she went through with it, the husband getting mad about it and saying things he can't take back, the truth comes out that neither of them did anything and they decide to stick together.

Today Hans was leaving for a trip to Dublin, so we got somethings done around the house before he got ready. I did laundry and dishes while Hans shoveled and packed. I even washed my winter coat- it was looking pretty nasty!

After Hans left I screwed around on the internet and decided what I wanted to bake for the week. I landed on homemade whole wheat english muffins and oatmeal cookies.




They don't look so perfect but they sure do smell good. They were super easy and this time I made them on the stove top like in the recipe. The dough took a little getting used to, thus the hamburger looking things you see before you. Next time, I hope to try a baking recipe. I can't wait to try them in the morning.

The cookies on the other hand taste AND look amazing! I used a recipe from my Quick-Fix Vegan called Harvest Cookies- basically oatmeal cookies with nuts and dried fruit. I didn't have the walnuts, dried cranberries or dried apples the recipe originally called for so I used coconut, almonds, dried mango and dried pineapple.



Hopefully these babies will last until Wednesday so Hans can enjoy them as well!!


I'm currently watching Mystic River for the first time. So far so good- Tim Robbins and Sean Penn are amazing! It was even cool to see Doyle's Cafe! I went there when I was in Boston! (For anyone wonderding, if you take Sam Adams Brewery tour you can take your label over to the bar and if you order a Sam Adams beer, you get to keep the glass!)
