Strawberry Banana "Softserve" for Breakfast

Good morning! I just thought I'd share this quick and and easy recipe (that I of course found on Pinterest). If you are anything like me, you buy a bunch of bananas that you eat most of, but by the time you get to the last two they've started to brown and bruise and you think "I'll put this in the freezer and make some banana bread soon." Then six months later you now have 8 bananas in the freezer and zero intention of making banana bread anytime soon.

There is hope! I believe I read in Women's Health a "tip" to cut up those browning bananas into small pieces and put them in the freezer for smoothies and such. Like you probably just did, I said to myself "Duh, That's so simple!" Now fast forward to finding the soft serve recipe on pinterest.

First, put those frozen banana pieces in a food processor. I put in about 2 bananas worth because my food processor is really small. In the recipe I originally followed, it was mentioned that she had tried this in her blender and it wasn't quite the same. So, start your food processor and scrape the edges occasionally. The bananas will start getting blended and fluffy. It will take around 5 minutes, depending on the amount of bananas and the food processor you have.


I added strawberries to mine, thus the red bits floating around. I also decided to add a splash of coconut milk to add some flavor and because my food processor small I thought it might help with the blending. Once it was blended to my liking I scrapped it out and put it into a bowl.


I popped it into the freezer while I blow dried my hair (normally I would have eaten it right away), and it was still delish! I will throw out the disclamer that I would not reccomend doing this for very long, in the short time I had it in there it did start freezing a little- think of what happens when you put your DQ Blizzard in the freezer. I can see adding other fruits or cocoa and peanut butter or chocolate chips. This may be my new snack when I'm craving icecream or something sweet!

Airplanes, Leinenkugel's and Timberwolves... OH MY!

Oh, what a weekend! I am definitely feeling today the effects of running around and staying up late for the past three days. And yes, I'm counting falling asleep at 11:30pm on Friday night as "late."

I wrote on Friday that the guy had a surprisedate for me that night. I have to give him credit for sweet date, but I had it figured out what were were going to do by mid-morning :).


He took me up in his plane! As nervous as I was, I did have a great time. We took off from his hangar in Lake Elmo and then we flew over downtown Minneapolis, did a touch-and-go at the Downtown St. Paul airport before returning to Lake Elmo. It was a fun flight, but afterwards we were tired so we went back to my place watched some Party Down and called it a night.


Saturday held our second adventure for the weekend, we decided to take a little vacation to Chippewa Falls, WI and stop by the Leinenkugel's Brewery. It was a nice little Saturday afternoon with beer, pizza and a hot tub. I did like the Leine's Brewery tour, it was short with interesting information but I had a bit more fun at Harpoon in Boston. (But it is hard to compete with a free sample straight off the line and 40 mins off all you can drink samples.)



To top off our weekend, my family had a suite at the Timberwolves game. Everyone from cousins to Aunt's and Uncles to my grandparents were there. It was a great down to the last second game and we even got to meet Crunch and some Cheerleaders.



I had a great weekend but I'm ready to stay at home for a few evenings... Here's to a relaxing and stress free week! :)

Happy Friday!


Happy Friday! I thought I would do a quick post- first I should mention that I watched a couple of movies from my list in the past weeks. (With the exception of the The Lion King, which I saw back in October I believe.) The other two movies I saw were Cinderella and Finding Nemo. Cinderella is in my top 3 favorite Disney classics. Which are Cinderella, Alice in Wonderland and Sleeping Beauty. That fact is probably one of the most girly things about me.

It's been a long week and I am excited for the weekend. Other than the great Valentine's evenings, and new yummy vegetarian recipes shared this week, the other thing I was excited about the face that my skin FINALLY cleared up now that I'm back to my old face wash. Small victory to win, but a great one non the less.

Tonight the guy has a surprise for me, which I am excited for- he just better hope it involves warmth because I have been sitting at my desk freezing all day! Lol! I have kind of a full weekend actually- tomorrow we are headed to Chippewa Falls, WI to the Leine's Brewery and to relax. Then on Sunday, one of my uncle's snagged us a suite at the Timberwolves game. I'm excited to see all my cousins... they are growing up so fact. Sniff!

Valentine's Day Recap



As I mentioned in my previous post the guy and I celebrated our Valentine's Day a night early, but now I can officially report that it was a success and very entertaining.


We started our evening out at Seven and basically ate until we were stuffed! We started with the crab cake and bruschetta- the crab cake was good, but I might not order for myself again. I would rather eat plain crab meat and dunk it in butter than have it mixed in a thicker sauce/batter and baked. The bruschetta was nice and light and something I would definitely eat again.


The guy decided to have lobster linguini which also looked delicious, but had muscles in it (not my cup of tea). I decided to have the Lobster Ravioli and it was to die for! I wish I couldhave a small plate of this for lunch every day. It would make everyday that much better.





When our server came to wave the dessert menu under our noses we had to say no, I think I would have popped! It would have been like that Monty Python sketch.


We scooted on over to the Guthrie- I almost slipped in the snow 100 times but eventually we arrived safely. Mike Birbiglia put on a great show! He was hilarious- his show was basically a condensed history of his love life mixed with the story of his car accident that he obsessed over. You can listen to that story on this episode of "This American Life".


We stayed after the show to get pics and autographs and eventually made our way home for light refreshments. :)

(Early) Valentine's Day Shmalentine's Day

Tonight, I'll be celebrating Valentine's Day early with my guy by going to see Mike Birbiglia at the Guthrie. He's currently touring "My Girlfriend's Boyfriend." I love his stories on This American Life, his Comedy Central Presents special, and almost any interview I've heard on some podcasts. So I'm pretty excited, but before heading to the Guthrie, I will be having dinner at Seven...



As long as I'm on the topic of comedy I thought I would recommend my one of my favorite podcasts to you all - WTF! with Marc Maron.


I can't begin to explain why I love this podcast so much. I think it's partially because Ihave this secret to desire to be a stand up comedian and partially because I like knowing that I'm not the only one with issues and get to hear other people work out theirs. He has done amazing interviews with Dane Cook, Jim Gaffigan, Carlos Mencia, Aubry Plaza, Donald Glover, the creator of The Onion, Todd Glass, Brendan Small.... and on, and on, and on. I would recommend listening to the 200th episode where Mike Birbiglia interviews Marc Maron (bringing it full circle).

We'll be seeing Marc Maron next month, it'll be interesting because I haven't seen too much of his stand up.

30 Under 30 List - Massage


Yippeee! Last week/weekend was a big week for my 30 by 30 list- I was able actually cross something off! On Saturday, I got my first ever MASSAGE!... and it was heavenly.


A few months ago I snagged a Google Offer for JUUT Salon. It had a restriction that you couldn't use it on a service that you have had in the past year, so I was limited to the spa services. I was having an uber stressful couple of weeks so the words "relaxed, centered and rejuvenated" had me hooked! My masseuse was Jen G. at the Edina/Southdale Salon and she was amazing. The massage started with some aroma therapy and a deep tissue massage on my back and some meditation. Then I flipped over and it was time for some hot stones, hand and foot reflexology, and ended with more meditation. The foot reflexology had me falling in and out of sleep, if that could happen everyday I would be the most relaxed person ever.


I felt amazing afterwards and I didn't get sore like everyone had warned me. I could definitely feel a different energy flowing through me.


In case you were wondering... The meditation was concentratingon your chakras, the colors on the image below are the same, but Jen gave me a word as well to focus on.
